Instructions
Step 1
Put the yeast in a bowl and add 150ml warm water, the sugar and oil.
Step 2
Stir to mix then leave for 5-10 minutes to activate and become frothy.
Step 3
Put the flour and salt in a large bowl.
Step 4
Make a well in the centre and gradually pour in the yeast liquid, stirring as you go until the mixture forms a ball of dough,

Lightly flour the work surface and knead the dough for 5 minutes or until smooth.
Step 6
Lightly grease the bowl and put the dough inside.
Step 7
Cover the bowl with clingfilm and leave it in a warm place until the dough doubles in size.
Step 8
Preheat the oven to 240'C (220'C fan, gas 9) and flour two baking trays.
Step 9
Make the pizza sauce by mixing all the ingredients together in a bowl

Season with salt and pepper.
Step 11
When the dough has risen, knock it back and divide it into two balls.
Step 12
Roll each one to a 25cm circle and put onto the prepared baking trays.
Step 13
Divide the pizza sauce between the two pizzas, leaving a lcm rim around the edge.
Step 14
Cook on the two top shelves of the oven for 12 minutes or until the cheese is bubbling and the dough is crusty.
Step 15
Serve cut into wedges and sprinkled with a few rocket leaves,
