Ingredients

2 tablespoonscoconut oil
4 headgarlic

3 stalkslemongrass
4 inch, smashed and diced
1 x 3 infresh ginger
ch, piece, chopped
4 cupswater

1 cupreduced sodium soy sauce
1orange
sliced
8chicken thighs

¾ cuppineapple juice
½ cuppineapple
chopped
½ cupreduced sodium soy sauce
3 tablespoonslight brown sugar
1 ½ tablespoonsgarlic

1scallion
sliced
2 teaspoonsfresh ginger
minced
2 teaspoonsshallot

1 ½ tablespoonsrice vinegar
Instructions
Step 1
1. To you prepare chicken: heat oil, garlic halves, lemongrass and ginger in a medium skillet over medium heat. Cook, stirring until starting to brown, about 2 minutes
Step 2
2. Immediately transfer the mixture to a large bowl and add water, 1 Cup soy sauce and orange
Step 3
3. Add chicken, cover and refrigerate for at least 6 hours and up to 1 day
Step 4
4. Meanwhile, to prepare sauce: puree pineapple juice and pineapple in a blender until smooth.
Step 5
5. Transfer to a medium saucepan and add soy sauce, brown sugar, garlic, scallion, ginger, shallot and vinegar
Step 6
6. Bring to a boil over medium high heat. Cook, stirring occasionally until reduced by half, 8 to 10 minutes

7. Position rack and upper third of oven. Preheat to 425 degrees. Line a rimmed baking sheet with foil
Step 8
8. Remove the chicken from the marinade and pat dry with paper towels. Place on the prepared pan
Step 9
9. Bake until chicken reaches 160 degrees, about 25 minutes

10. Brush with 2 tablespoons of the sauce
Step 11
11. Increase oven temperature to broil
Step 12
12. Broil on high until charred in spots, 2 to 3 minutes
