Instructions

Step 1
1. In a pan or pot of your choice (wide pan or pot is the best), heat the oil. Add the onion and a couple of pinches of salt. Cook, stirring, until cooked, 5 minutes.
Step 2
2. Add the ginger and garlic and then spices (garam masala, turmeric, smoked paprika, and optional cayenne pepper. Add additional oil as needed. Stir consistently for 30 seconds. This method is called, blooming spices in oil, which supposed to enhance flavor
Step 3
3. Add red lentil, the tomatoes, and your choice of bouillon cube or salt. Bring to a boil. Reduce heat to low and simmer, stirring and scraping the pan as needed after 10 minutes.
Step 4
4. Stir in the optional lime juice, then taste and season with additional salt and pepper.
Step 5
5. Use the back of a spoon to make wells for eggs in the sauce. Add 1 egg into each well
Step 6
6. Cover it with a lid and simmer over low heat until eggs cooked to your preference (e.g., fully cooked, runny, etc)
Step 7
7. Sprinkle with cilantro and serve rice, nan, or whatever you want to serve together.
