Instructions
Step 1
Preheat the oven to 400°F (200°C).
Step 2
Cut a sheet of alum into 6 pieces, each about 12 x 12in (30 x 30cm).
Step 3
In a medium bowl, toss the potato wedges with olive o seasoning, salt, and pepper until well coated.
Step 4
Place an equal portion of potatoes onto each piece of foil
Step 5
Create a packet by folding the foil around the potatoes so they are fully enclosed, and fold over the edges to seal.
Step 6
Place the packets on a baking sheet and bake for 25 min.
Step 7
Remove the tray from the oven, open the foil packets, and crack 2 eggs on top of the potatoes in each packet.
Step 8
Top each portion with scallions and season.
Step 9
Bake for another 18 to 20 minutes, until the eggs are firm. place each foil in a meal prep container.
