2 cupslow-fat Greek yogurt
organic plain

1English cucumber
small, peeled, sliced in half lengthwise, seeded, and grated

2garlic cloves
medium, minced

2 tablespoonsfresh lemon juice

2 tablespoonsextra-virgin olive oil

2 teaspoonsgrated lemon zest

3 tablespoonsfresh dill
finely chopped

½ teaspoonsea salt

¼ teaspoonblack pepper
Instructions
Step 1
In a bowl, combine all the ingredients and stir until smooth. Cover and refrigerate for at least 30 minutes, then serve.
Note
Step 2
It's easiest to grated the cucumber with a food processor, but it's simple enough to do with a hand grater, then allow it to drain in a sieve, pressing out excess liquid, before mixing with the yogurt.
