Instructions

Step 1
Cool your pasta in salted boiling water
Step 2
Meanwhile place egg yolks, loads of Parmesan, black pepper in a bowl & mix well. Add the zest of the lemon & the juice of half the lemon.
Step 3
When pasta is ready take a little (8 tbsp) of the pasta water & add to the egg mix. Stir it well to combine.
Step 4
Iโ€™m a separate pan place the linguine & pour over the egg mix. Be sure to move the pasta as much as you can to prevent the egg scrambling. Youโ€™re looking for a velvety texture.
Step 5
Serve & finish with some cracked black pepper, more Parmesan & a basil leaf.
