Instructions
Step 1
Preheat oven to 220°C/200°C (fan) Boil a kettle Wash the spinach, then add to a colander and pour boiled water over it Rinse wilted spinach under cold tap until cool Squeeze water out and chop roughly

Add soft cheese to a bowl with 1 tbsp boiled water and season with pinch of salt and pepper Cut potatoes skin on into bite sized pieces

Line half baking tray with baking paper Lay puff pastry into lined side Score 1pm border round edge with knife
Step 4
Spread soft choose over pastry within border Add chopped spinach and crumble feta on top Add chopped potatoes to other side with drizzle of vegetable oil Add dried oregano and pinch of salt and mix
Step 5
Put try in over for 25-30 min or until pastry is cooked through, puffed up and potatoes are golden
Step 6
Once the tart is almost done, combine red wine vinegar with 2 tbsp olive oil in a large bowl Season with a pinch of salt
Step 7
Wash and pat the rocket dry Once the tart is done, add rocket to dressing and give it a good mix up
Step 8
Cut spinach & feta tart in half Serve tart with crispy potatoes and rocket salad to the side
