Ingredients

Garlic Confit Mayo
Pickled red onion
250mlred wine vinegar
1red onion
thinly sliced
2 Tbspsea salt
2 tbsosugar
1 tspcoriander seeds
1 tspblack peppercorns
1bay leaf
0.5cinnamon stick
2star anise
Sandwich
14 ozstrip loin
1French baguette
ends cut, cut lengthwise
1Buffalo mozzarella vall
fresh, thick sliced
1tomato
thinly sliced
boston lettuce
thyme
rosemary
butter
sea salt
black pepper
Instructions
Step 1
Preheat oven to 240 and roast garlic for 2 hours with oil, rosemary and thyme.
Step 2
Blend roasted garlic, eggs, lemon juice and salt. Add some garlic infused oil to emulsify, adding a little at a time until smooth texture
Step 3
Toast seasoning for onions in dry pan. Deglaze pan with red wine vinegar then add salt. Put sliced onions in Mason jar and cover with mixture.
Step 4
Salt steak generously and sear on all sides. Add butter and herbs to pan abmnd baste steak until med rare. Let rest for 7 mins, then slice.
Step 5
Assemble sandwich!
