Versatile breakfast (or any meal) that is not expensive and can be adjusted for taste or preferences. Package of potatoes O Brien, 1lb of meat or make from scratch chopping your potatoes, veggies and adding preferred protein.. goes great alone, topped with egg or egg mixed in, or tossed into soft tortillas. I’ve used ground sausage, beef, and chorizo among family favorites. Even works in an instant pot!

Instructions

Step 1
One pot - cook sausage in deep skillet then add potatoes and extra oil if needed Over medium heat. Cover and heat per potato package directions. I toss occasionally to make sure cooks thru and mixes the ingredient. I add seasonings at the same time with potato’s. Once potatoes cooked thru it’s ready to serve.. we usually top with eggs and cheese and salsa. I adjust seasonings depending flavor looking for or what have available.. sometimes I cook meat separately especially if extra fatty etc.. mix meat in with rest when potatoes half or close to done.. I over estimate prep and cook time for the precut frozen ingredients but I work slow also. I’ve added a can of Rotel, jalapeños, Italian seasoning, taco seasoning, fresh diced tomatoes, chopped fresh spinach etc.. kids love to put this on tortillas!
