Instructions
Step 1
Prepare the beef and add to roasting tin.
Step 2
Fry the onions until softened then add in garlic, ginger and chillies, cook for 5 mins then blend to a paste.
Step 3
Add in the curry paste and cook for 2 mins then add in the lentils, tomatoes, water, bay leaves, salt and sugar and bring to a simmer
Step 4
Transfer to roasting tin and cook for 2hrs at 160°C, remove from oven and add in spinach, let it wilt with the lid on
Step 5
Serve with rice or chips
