Ingredients
6 servings
2 cupsJasmine brown rice
uncooked, thoroughly rinsed
2 cupsvegetable broth
1 x 16 ozcan diced tomatoes
1 x 15.5 ozcan pinto beans
drained and rinsed
½ cupred bell pepper
diced
½ cupred onions
minced
⅓ cupcelery
chopped
¼ cupfresh cilantro
chopped
2cloves garlic
minced
1 tablespoonchili powder
1 tablespooncumin
½ teaspoondried oregano
salt
to taste
pepper
to taste
Fresh lime
sliced into wedges
cilantro
roughly chopped
Instructions
Step 1
Add all of the ingredients into your rice cooker pot and mix thoroughly until uniform. Cover and set it to cook on the “brown rice” setting (about 25-30 minutes).
Step 2
Remove lid and allow the rice to cool for 5 minutes, then season with salt and pepper to taste.
Step 3
Serve with a wedge of lime and a sprinkle of fresh cilantro.
