Ingredients

1 Tbspoil

3garlic cloves
minced

1red onion
chopped fine

0.5red chili
seeds removed, for more spice leave seeds in or use whole chili

1carrot
grated

1zuchinni
chopped

2red bell peppers

3 Tbsptomato paste

200gcherry tomatos
or 1 can chopped tomatoes

1 tspturmeric

½ tspsmoked paprika

½ tspblack pepper

4 Tbspred wine

2 Tbsptamari

500gshort grain brown rice

1 litervegetable stock

1 ½ Tbsplemon juice
half lemon

cashews
for garnish, optional

fresh chives
optional

1 cupgreen olives
for garnish, edited
Instructions
Step 1
1 - Heat pan to high heat and add oil, garlic, red onion, and red chili and cook for about 2 minutes.
Step 2
2 - Add grated carrot, zucchini, red pepper, and tomatoe paste and cook for about 3 minutes, stirring intermittently.
Step 3
3 - Stir in cherry tomatoes.
Step 4
4 - Add turmeric, smoked paprika, and black pepper.
Step 5
5 - Add in red wine and tamari.
Step 6
6 - Add in brown rice and fry for about 2 minutes, stirring frequently so as not to stick to pan.
Step 7
7 - Add in vegetable stock and bring to a boil, then reduce to a simmer.
Step 8
8 - Cook for about 25 minutes to let moisture boil off.
Step 9
9 - Add in lemon juice and optional garnish and serve. add olives
