can of chopped tomatoes

1 teaspoonsalt

3 teaspoonscorriander powder

chilli powder

2 Tablespoonsginger and garlic paste

Instructions
Step 1
Chop the onions fine. Place all ingredients for flavouring the oil in a pan and cook on a high heat till the onions caramelise (beware of rapid burning).
Step 2
Add the chicken and "bhoon" on a high heat till no water is left at the base.
Step 3
Add the remaining ingredients for cooking the chicken, mix once, cover and let it cook over a medium heat for around 15 minutes. Keep an eye on water content and add more water if the mixture is dry or sticking.
Step 4
"Bhoon" again on a high heat until the water evaporates and the masala is left bubbling at the base. The masala should continue to bubble when picking it with a wooden spoon.
Step 5
Once cooked, add a tiny volume of water to determine the consistency of your final dish. Stir. The dish is almost ready.
Step 6
Add the garnish items over the top, switch the heat off and leave the pot covered for around 5 minutes. This allows the garnish to steam in the residual heat and while the dish "settles".
