Who doesn't like tacos? It is one of the things that I miss since going plant based. This combination is the so good, and so easy. Plus if you have leftovers, it makes great chili.

Instructions
Step 1
Add walnuts to a food processor, process to slightly crumble. Add in the cauliflower process again. Set on the side.
Step 2
In a pan heat oil, saute onion, pepper and garlic until soft. Next add in the cauliflower walnut mixture and continue sauteing.
Step 3
Add in the seasonings and combined. Once combined add tomato paste, and saute for a bit. Pour in tomato sauce and broth, and let simmer for 15 minutes.
Step 4
Serve with corn or flour tortillas, and fixing of your choice.
