Ingredients

Main Meal:
groundnut oil
1onion
cut into thin wedges
2garlic cloves
finely chopped
1red chilli
finely sliced
1ginger
thumb-sized piece, peeled & grated
1 sticklemongrass
2chicken breasts
free-range, sliced
50gcrunchy peanut butter
1 Tbspfish sauce
1 Tbsplow-salt soy sauce
1 Tbspcaster sugar
200mllight coconut milk
200gudon noodles
beansprouts

To Serve:
Instructions
Step 1
Heat a splash of the oil in a wok or large frying pan
Step 2
Add the onion, garlic, chilli, ginger and lemongrass to the pan & fry until golden
Step 3
Add the chicken & fry for a few more minutes (until colour shows)
Step 4
Combine the peanut butter, fish sauce, soy sauce, caster sugar & coconut milk (adding a splash of water if needed) and then stir the mixture into the pan with the chicken)
Step 5
Bring the pan up to the boil then simmer on a medium heat for 5 minutes/when the chicken is cooked through
Step 6
Add the noodles & beansprouts and combine, cooking for a further couple of minutes
Step 7
Serve immediately, scattering the bowl with lime wedges & spring onion slices
