Caramelised Banana & Raspberry Oatmeal

Is there anything better than a warm bowl of oatmeal on a chilly morning? This caramelised banana and raspberry oatmeal is incredibly delicious and is sure to become a favorite for breakfast. Cook time includes time to bring to a boil.

Instructions

Step 1
Place the oats, chia seeds, milk or water and 1 .5 tsp cinnamon in a small saucepan. Stir to combine and allow to soak for a minimum of 15 minutes.
Step 2
Place the saucepan over a medium high heat and bring to the boil. Once boiling, reduce the heat to a simmer and cook for 5-8 minutes, or until the mixture thickens to your desired consistency.
Step 3
While the oats are cooking, heat the butter or coconut oil in a non-stick frying pan over a medium high heat. Add the maple and remaining cinnamon to the pan and stir to combine.
Step 4
Place the banana halves in the pan and cook for 2 minutes on each side or until golden and caramelised. Set aside.
Step 5
To serve, place the porridge in a serving bowl and top with the caramelised banana, yogurt and a handful of raspberries.
