Chickpea avocado mash

A twist on avocado toast with the addition of protein packed chickpeas. This recipe calls for raisins but you could use cranberries or leave them out.

Instructions

Step 1
Drain and rinse the chickpeas. Add to a large bowl and mash them, leaving it a little chunky
Step 2
Add the avocados, the salt and pepper and the juice of the lemon and mix well
Step 3
Add the raisins and mix together
Step 4
Serve this on toast with arugula, optional add chopped bacon on top, or on crackers, a wrap, pita bread, etc
