Step 1
In a large pot, over medium-high heat, add the ground turkey. Cook for 2-3 minutes, then add the italian seasoning, sage, red pepper flakes, salt, and pepper. Cook for another 6-7 minutes, or until the turkey is cooked through. Remove and set aside.
Step 2
Heat a drizzle of olive oil to the same pot and add the onions. Cook for 2-3 minutes, or until the onions are translucent. Add the garlic and cook for another 30-45 seconds.
Step 3
Add the chicken broth and bring to a boil.
Step 4
Once the broth is boiling, add the potatoes and cook for 10 minutes, or until tender.
Step 5
While the potatoes cook, combine the half and half and cornstarch in a small bowl until mixed well.
Step 6
Once the potatoes are tender, add the cornstarch mixture, kale, and ground turkey. Cook for 10 more minutes, or until the kale has wilted and the soup has thickened.
