Black Bean Mango Salad

Creamy black beans, crunchy veggies, sweet and juicy mango… This delicious, high-fiber dish takes less than 20 minutes to prepare. Eat it as is or serve it with a side of fish or chicken.

Instructions
Step 1
Cook farro according to package instructions.
Step 2
Chop broccoli, onion, and pepper, and place into a large mixing bowl.
Step 3
Cube mango and add to bowl with veggies
Step 4
Drain and rinse black beans and add to bowl.
Step 5
In a small Tupperware container add oil, vinegar, salt and pepper, and chili flake. Tightly cover with lid and shake to mix together.
Step 6
Add cooked farro and dressing to mixing bowl and toss. Enjoy hot or cold!
