Instructions

Step 1
In a medium pot, fry bacon until crispy and set aside. Leave some bacon fat in the pot.
Step 2
Cut jalapeños into rounds and saute until crispy. Set aside.
Step 3
Rough chop red onion and garlic. Saute until onions are cooked. Add dehydrated onion (or 2 Tbsp onion powder) and saute for another 30 seconds.
Step 4
Add coconut milk, frozen cauliflower, and frozen corn. Stir every few minutes until nothing is frozen.
Step 5
Add half of the jalapeños back into the pot. Using a hand blender, blend everything that's in the pot until its smooth (or whatever consistency you want it). Add dairy free milk (I suggest oat milk) as needed.
Step 6
Remove from heat and mix in the vanilla extract. Season with salt and pepper to taste.
Step 7
Top the bowls of chowder with crumbled bacon and crispy jalapeño pieces.
