2 cupsbrown lentils
cooked

½ cuptomato
diced

1 cupyellow bell pepper
diced

1 ½ cupcucumber
diced

1 cupbeets
diced roasted or pickled

½ cupred onion
diced

¼ cuptoasted pine nuts

2 Tbspfresh basil
chopped

3 Tbspmint leaves
chopped

¼ cuptahini

1 Tbspolive oil

2 tspmaple syrup

2 tspdijon mustard

¼ cuplemon juice

Instructions
Step 1
Combine all salad ingredients in a large bowl, then whisk together dressing ingredients and pour on top. Keep in the fridge for 5 days.
