Instructions
Step 1
Add orzo to pot of boiling salted water. Cook until just tender, around 8 min. Drain. Rinse with cold water and drain again. Add 2 T. olive oil and mix well. Set aside.
Step 2
Combine cherry tomatoes & 1 tsp. kosher salt in large bowl. Let stand around 30 min & drain any extra liquid.
Step 3
Add all remaining ingredients except orzo, salt, & pepper, and gently mix. Add orzo and gently toss.
Step 4
Season with salt and pepper. Cover and refrigerate until ready to serve.
