Step 1
1-2 days in advanced, remove tofu and wrap thickly in paper towels. Place back in fridge and let water get soaked out.
Step 2
Combine dashi stock, mirin, sugar, soy sauce, and salt in small pot and bring to boil. Boil for 5 min.
Step 3
Cut tofu into large cubes. Coat tofu in corn starch. Fry in air fryer at 450F for 12-15min remembering to rotate every 5 min.
Step 4
Place broth in bowl. Place tofu in broth and add choice of toppings.
