Instructions
Step 1
Bring 2 cups of water to boil in a large saucepan, over medium heat.
Step 2
Add washed quinoa, cumin powder, coriander powder, turmeric powder and salt to taste. Stir and mix everything together.
Step 3
Cover, reduce heat to low and simmer until quinoa is tender.
Step 4
Once cooked, transfer quinoa onto a salad bowl, add chopped scallions, chopped cilantro, chopped carrot, chopped mint and chopped red bell pepper. Stir and mix everything.
Step 5
Pour the dressing over the salad and add chopped dried cranberries.
Step 6
Mix well and enjoy this easy healthy salad.
