Fragrant Pork Larb in lettuce cups
Who would have thought that minced pork could be so flavourful and delicious in a crunchy lettuce cup?

Ingredients
4 servings
45mlolive oil
1lemongrass stalk
hard outer husk removed
1red chilli
2garlic cloves
8 cmginger root
1kgpork mince
fresh mint
plus extra for serving
fresh coriander
plus extra for serving
45mlpeanuts
plus extra for serving
30mlfish sauce
15mlsoy sauce
2juice of limes
4scallions
thinly sliced
8 leaveslettuce
iceberg or cos
5cucumbers
snacking, thinly sliced
Instructions
Step 1
Heat the olive oil in a large wok over medium heat.
Step 2
Chop the lemongrass, chilli, garlic and ginger and add to the oil in the wok. Cook for 1 minute until fragrant.
Step 3
Add the pork mince and cook for 7 minutes until browned.
Step 4
Meanwhile, roughly chop the herbs and peanuts.
Step 5
Add the fish sauce, soy sauce and lime juice to the pan and cook for a further 5 minutes. Remove from the heat and stir in the fresh herbs, peanuts and scallions.
Step 6
Spoon the pork larb into the lettuce leaves and top with the cucumber slices and extra fresh herbs. Sprinkle over a few extra peanuts before serving
