Instructions
Step 1
Quarter the aubergines and fry them in a pan. Set aside.
Step 2
Sauté onions and garlic in a big pan.
Step 3
Add curry powder, tumeric and extra oil, if needed.
Step 4
Let sit for a few minutes before deglazing with vegetable stock.
Step 5
Bring it up to a simmer and then add peanut butter and coconut milk.
Step 6
Submerge aubergines in the sauce.
Step 7
Let it simmer for 30min on low heat.
Step 8
Adjust seasoning with soy sauce and sugar.
Step 9
Stir in the spinach.
Step 10
Serve with rice.
