Instructions
Step 1
Wash the watercress and parsley.
Step 2
Crack the eggs in a bowl and add the greens and salt.

Using a hand blender, mix for 2 minutes.

Heat the avocado oil in a skillet over medium heat.

Once hot, pour the egg mixture a thin layer.
Step 6
Cover and cook for 3 minutes.
Step 7
Flip and cook for another minute.
Step 8
Repeat until you have 4 egg pancakes.
Step 9
Serve with avocado, peppers, tomatoes.
