Parmesan Crusted Salmon Over Boursin Pasta

Instructions

Step 1
Preheat your oven to 425 degrees Fahrenheit & bring a large pot of water to a boil

Mince 2 garlic cloves & finely chop about 2 tbsp of sun dried tomatoes
Step 3
Brush your clean salmon with oil, season with freshly cracked black pepper & salt to taste then transfer to a baking sheet lined with foil

Make the parmesan crust by combining 3/4 cup plain panko bread crumbs, 1/2 cup freshly grated parmesan cheese, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, 1/4 tsp red pepper flakes, the juice of half a lemon, 2 tbsp melted salted butter and salt & pepper to taste. Mix until well combined
Step 5
Add 2 to 3 tbsp of the parmesan mixture to each salmon filet and press firmly to help the breading stick to the salmon. Bake at 425 F for 12-15 minutes. Everything should be finished cooking around the same time so once salmon is in oven, salt the boiling water, add in the pasta of your choice & cook until al dente

While the pasta & salmon are cooking, begin making the pasta sauce by melting 2 tbsp of salted butter over medium heat then add in the 2 minced garlic cloves & sauté until fragrant. Next add the 2 tbsp of finely chopped sun dried tomatoes & sauté for an additional 2-3 minutes

Now add in the 6 oz bag of baby spinach & sauté until slightly wilted, add 1 cup of half & half or heavy cream, 1 boursin garlic & herbs cheese, 1 cup freshly grated parmesan cheese, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp Italian seasoning, 1/4 tsp red pepper flakes and salt & pepper to taste. Whisk until cheese has melted then add in about 1/2 a cup of pasta water. If sauce is too thick for your liking add a bit more pasta water, if too thin, just let the sauce simmer for a few more minutes & it will thicken up a bit more
Step 8
Add the pasta directly to the sauce and toss until pasta is coated in sauce. Serve topped with more freshly grated parmesan, parsley & red pepper flakes if desired. Enjoy!
