Ingredients

Salad
100gbrown rice noodles
vermicelli
4 teaspoonolive oil extra virgin
200gtofu
firm, cut into slices
4 cupcabbage
wombok, finely shredded
1.33carrot
finely shredded
2cucumber
lebanese, finely sliced
1.33mango
sliced
2chilli
red, seeds removed, finely sliced
8 tablespoonmint
fresh
6 teaspoonpeanuts
chopped
Dressing
Instructions
Step 1
In a small bowl or jar, combine all ingredients for the Tamari Lime Dressing and set aside.
Step 2
Plunge the noodles into boiling water and leave to soften, about 5 minutes.
Step 3
Fry the tofu in olive oil until browned on both sides.
Step 4
Meanwhile, in a large bowl, combine cabbage, carrot, cucumber, mango, chilli and mint. Pour over Tamari Lime Dressing and toss to combine.
Step 5
Sprinkle over peanuts and top with extra mint and chilli if desired.
