Thai Curry Udon | Vegan 🌱

Thai Curry Udon | Vegan 🌱 Creamy, spicy and oh so heavenly curried Udon noodle. It’s everything you’ve been needing in your life right now. One of the reasons why this recipe works so well is because it is you can throw in whatever vegetables or protein you fancy, easy enough to do on a week night and has maximum flavour! Ingredients * 400 gm fresh Udon noodles (cooked) * 2 Tbsp neutral cooking oil * 4 cloves garlic minced * 1 Tbsp grated fresh ginger * 2-3 fresh red chillies * 2 small spring onions * 1/4 Cup Vegan Yellow Thai curry paste * 2 Stalks lemongrass * 3 lime leaves * 7-8 Mushrooms sliced * 1/2 Broccoli Small ( florets ) * Half Red pepper or any seasonal vegetable * 1 can coconut milk * 1 Tbsp soy sauce * 1 tsp maple syrup or sugar * Heat the oil in a large pan or wok. * Add minced ginger, garlic and chillies, and stir for few seconds * Add some onions, lemongrass and sliced mushrooms, cook on medium heat for few minutes till mushrooms are soft and aromatics are translucent. * Next add the Yellow Thai curry paste and cook week till the oil separates. Add some maple syrup, and sprinkle salt according to your taste. * Reduce the heat and carefully add the coconut milk or cream. * Toss in the vegetables, soy sauce, snipped lime leaves and give it a quick stir. * Simmer for 2 minutes and add cooked udon noodles, gently mix everything together and serve warm with squeeze of fresh lime & dollop of homemade chilli oil (check out the recipe on my page and Follow for more
