Body Coach: Low Carb Granola (Joe Wicks)

From the Body Coach (Joe Wicks) app. Supposedly the portion sizings are adjusted to my height (below 5’2) but I’ve found that halving the below amounts still gives me a week’s worth of granola.

Instructions

Step 1
Preheat the oven to 160°C. Combine the rolled oats, mixed seeds, pecan nuts and coconut chips in a large bowl.

Stir together the apple sauce, coconut oil, honey and salt in a separate bowl then pour over the dry and toss to coat.
Step 3
If you can't get hold of unsweetened apple sauce, you can make your own by gently stewing chunks of apple (core and skin removed) over a low heat with a splash of water until soft, then blitz.
Step 4
Tip everything into a large roasting tray then pat down the to form an even layer. Bake for 20 minutes, stirring occasionally, until golden and crisp.
Step 5
Remove from the oven, leave to cool then stir in the chocolate chunks. Serve each portion of granola with the yoghurt.
Step 6
Kept in an airtight container, the granola will last up to 3 weeks.
