Step 1
Cook chicken

Step 2
Chop the red onion and finely dice some pickles. Cut some slices of the cheddar.
Step 3
Mix ketchup, mayo, mustard, some pickle juice, capers, and diced pickles in a small bowl for the sauce. Crush the avocado in a bowl and drizzle with olive oil and salt. Mix well.
Step 4
Once the chicken is cooked, add the sliced cheese on top and place back in the oven for a further 3-5 minutes.
Step 5
Toast the bread and add sauce to one side, and the crushed avocado to the other. Add 2-3 goujons, some red onion, spinach and pickles.
