Ingredients

0.5red onion
2 Tbspolive oil
1clove of garlic
½ tspginger powder
0.5red chili
if you like it spice like dave, leave the seeds in
1 Tbspcurry powder
1 tspcumin powder
1 tspground coriander
1 tspground paprika
1 x 400gtin chopped tomatoes
400gtin coconut milk
400gtin of chickpeas
drained and rinsed
1 tspsalt
½ tspground black pepper

Zest and juice of
avocado

Instructions
Step 1
Heat the oil on a medium heat.
Step 2
Thinly slice the onion, garlic and chilli. Add to the pan.
Step 3
Add the spices and cook for 30 seconds.
Step 4
Drain the chickpeas.
Step 5
Add the chopped tomatoes, coconut milk and chickpeas to the pan.
Step 6
Add salt and pepper.
Step 7
Chop the coriander and add to the pan along with the lime zest.
Step 8
Add the lime juice, season to taste, and serve with (optionally) the cooked grain of your choice and chopped avocado.
