Instructions
Step 1
Turn the skillet on med/high. Add broth. zest the lime and cut it in half. Squeeze the juice from the lime. Reserve both.
Step 2
Sear shrimp in the broth with the seasoning, meanwhile cook the rice according to the instructions in the microwave.
Step 3
Remove the shrimp when it's done (pink) and add the rice. salsa, and lime juice. Toss with shrimp.
Step 4
Garnish with yogurt and zest. Add Himalayan salt and pepper to taste.
