Step 1
Fry off 240g lean beef mince, add tbsp garlic puree, sweet red pepper and white onion
Step 2
Boil 150g dry pasta in salted water
Step 3
Then add 10g runny honey, tsp chipotle paste, 2 tbsp salsa, crumbled beef stock cube, 2-3 ladles of pasta water
Step 4
Combine pasta with beef mixture
Step 5
I topped with 20g Red Leicester cheese and 40g eat lean cheese and popped in the oven for a couple of minutes to melt
Step 6
Then finished with a squeeze of lime and fresh coriander
