Ingredients
8 servings
5 lbsBeef Brisket
cut in 1" cubes
¼ cupolive oil
2 cupsyellow onions
chopped
6garlic cloves
large, minced
6 cupstomatoes
chopped with their liquid
½ cupstrong coffee
or Camp Coffee
2Green Peppers
diced
2 cansKidney Beans
or Aduki beans, Drained and rinsed
2 Tbspbasil
1bay leaf
2 TbspSalt

For the Spice mix

Instructions
Step 1
Pat the beef cubes dry with paper towels
Step 2
Heat the oil in a very large heavy casserole and quickly brown the meat in batches on all sides. Transfer to a separate bowl and set aside
Step 3
Sauté the onion and garlic in the same oil over medium heat for 8 to 10 minutes until limp but not brown
Step 4
Add the chilli powder, pepper flakes, cayenne pepper and cumin and sauté for 1 minute
Step 5
Add the peppers, bay leaf, tomatoes with their juice, the reserved meat, 1 tbsp salt (no!) And 1 tbsp pepper.
Step 6
Bring to the boil the reduce heat, cover the pot with a tight fitting lid and simmer for 2.5 hours, stirring occasionally
Step 7
Add salt to taste and the coffee, cover the pot and simmer for one more hour
Step 8
Add the beans and basil and warm through
