Instructions
Step 1
Grease muffin pan generously. Preheat oven to 350º F
Step 2
Heat butter in skillet. SAUTÉ onions (using Sautéed Onions recipe). Then add red/green pepper and garlic.
Step 3
Cook until garlic, peppers and onion are slightly tender. Add tomatoes in at the end.
Step 4
In separate bowl whisk together, eggs, cream and milk, garlic powder, green onions (optional) and grated cheese. (If you prefer bites more dense use a fork to combine instead of whisking and mix only until combined.)
Step 5
Stir sautéed onions, garlic, tomatoes and peppers into mixture.
Step 6
Pour into greased muffin pan. Until 3/4 full.
Step 7
Bake 350 for about 15 minutes or until golden brown.
