Instructions
Step 1
Heat avocado oil in a pan on medium heat
Step 2
Fry onion and garlic for 2 minutes
Step 3
Add the chickpeas, pumpkin, zucchini and diced tomatoes and mix
Step 4
Add tumeric, curry powder, paprika, salt and pepper and simmer for 5 minutes
Step 5
Pour the coconut milk and simmer for 15 minutes or until the chickpeas and pumpkin have softened
Step 6
Serve with rice, pasta, a side salad or simply enjoy the curry on its own!
