Instructions

Step 1
Place chicken thighs in large dutch oven or pot and season generously with salt and pepper. Add onion, bay leaves and garlic.
Step 2
Cover the chicken completely with stock and bring to a boil over high heat. Reduce heat to simmer and cook until chicken is fully cooked through, about 15 to 20 minutes
Step 3
Remove chicken using a slotted spoon and transfer to a plate. Reserve 1 cup and 2 ¼ cups cooking liquid, separately.
Step 4
Let chicken cool for 5 minutes, then shred with a fork. Toss with 1 cup reserved cooking liquid to keep chicken moist.
