Instructions
Step 1
Add olive oil to a pan over medium heat
Step 2
Add the potatoes and onion and sprinkle with salt and pepper to taste and stir
Step 3
Cover & cook for 15-20 minutes, stirring occasionally until potatoes are tender
Step 4
Turn the heat to high and cook for an additional 5 minutes to brown the potatoes.
