Curried Chicken Salad
This is a work in progress. Years ago I went to the LA County Museum of Art and had a curried chicken salad sandwich that I am still trying to recreate.

Ingredients

2 cupschicken
chopped leftover

1 Tbspoil

2 tspcurry powder

1clove garlic
minced

½ cupgolden raisins

½ cupcashews
coarsely chopped

1stalk celery
chopped

mayonnaise
Notes:
Instructions
Step 1
Cut up leftover chicken to small cubes.
Step 2
Add olive oil to pan, Sauté curry powder and garlic until heated through.
Step 3
Add raisins and cashews to pan with a tiny bit of water (1 tsp?) cover and set aside to steam.
Step 4
Mix chicken with other ingredients (spice mixture should be cool).
Step 5
Mix in enough mayo to suit your taste. Maybe some salt and pepper.
Step 6
Serve on croissants sliced in half with lettuce if you like it. Regular bread works fine if you don't have croissants.
