Step 1
Mix all the ingredients for the dressing. Set aside.
Step 2
Cut florets from the cauliflower, try not to have too much stem. These logs are ideal for working in during cooking.
Step 3
Put the florets in batches in the Xpower Chopper (or in a blender). Always put in a bowl.
Step 4
Add dressing to the cauliflower couscous.
Step 5
Finely chop the mint leaves and add them.
Step 6
Add raisins.
Step 7
Remove the seeds from the pomegranate and add them (keep a handful aside to use as a topping if you wish).
Step 8
Chop the almonds finely and roast them in a dry pan.
Step 9
Serve cauliflower couscous in a large bowl, top with toasted almonds, fresh coriander and extra pomegranate seeds. Maybe a little sumac.
