Chicken enchiladas
Instructions
Prep:30minCook:45min
Oil the bottom of a casserole dish
Layer with white corn tortillas
Add about a half a can of hatch
Thin layer of cheese
Layer with shredded chicken. I use the ready to use shredded chicken you can buy at the grocery store
Add another layer of hatch (about 1 can for middle and ½ can for top ½ can for bottom totaling 2 cans)
Another thin layer of cheese
Top layer of tortillas being sure to cover the top.
The other ½ can of hatch and good layer of cheese
Cove with 1 can sliced black olives
Cook on Bake at 425° for 45 mins or until top is golden brown and crispy
