Ingredients
3 servings
1aubergine
6artichoke hearts
cooked, sliced
1 tspolive oil
salt
bread
I used, gluten-free
pesto
rocket leaves
sun-dried tomatoes
Instructions
Step 1
1️⃣Firstly, slice the aubergine into circles and add to a mixing bowl with olive oil + salt and shake to combine
Step 2
2️⃣Now heat a griddle pan adding the aubergine circles and frying on either side until lightly charred
Step 3
3️⃣Finally smother your bread in pesto + handful rocket + grilled aubergine + artichoke + sun-dried tomatoes and enjoy!
