Making the Curry Paste
Step 1
chop your cilantro and separate your stems from your leaves.
Step 2
Dice a small dice on your shallot, jalapenos, garlic, ginger and lemon grass, then add to a warm pan and saute.
Step 3
once golden brown add in your spices. Cook gently for a few min. Then add your soy sauce to sort if deglaze the pan of its curry goodness and coconut milk to bring it back together.
Step 4
Stir in your brown sugar and vegetable stalk. Lastly stir in your chopped cilantro leaves.
