250gFlour
25gcaster sugar
10mlBaking Powder
1mlSalt
125gbutter
or margarine
3Egg Yolks

15mlWater

Instructions
Step 1
Sift flour, castor sugar, baking powder and salt together
Step 2
With the tips of your fingers work the butter into the mixture bit by bit until mixed well
Step 3
Whisk the egg yolks and water until mixed
Step 4
Add the egg yolks and water mixture to the flour mixture and mix until a soft, easy to handle dough forms
Step 5
Knead the dough well and cover with a dishcloth - Put aside to rest
Step 6
Pre-heat the oven to 180'C (350'F)
Step 7
Prep the muffin pan by covering the sides and bottom with a thin layer of butter / spray 'n cook
Step 8
Roll the dough out on a flat surface thinly
Step 9
Use a cookie cutter to cut out big circles and place the circles in the muffin pan - Shape to the muffin shape
Step 10
Add a bit off Apricot Jam (no more than 2/3 of the dough cup) into each of the dough cups
Step 11
Whisk the egg whites until stiff and add the sugar bit by bit
Step 12
Add the coconut to the egg white and sugar mixture whilst whisking, also slowly (bit by bit)
Step 13
Cover the top of each of the dough cups with the egg white, sugar and coconut mixture
Step 14
Bake for 20-25 minutes on the bottom rack
Step 15
Let cool in the pan until easy to remove and place on cooling rack to cool further
Step 16
