Instructions

Step 1
Heat pan to medium high. Fry up the bacon until nearly crispy. Remove bacon from pan.
Step 2
Add in celery, garlic, and onion and cook until tender.
Step 3
Chop cooked bacon into small pieces and add to vegetables. Remove from heat.
Step 4
Add cooked vegetables, chicken bone broth, and cooked ham to slow cooker. Cook on low for 8 hours.
Step 5
Add in light cream, and shredded cheese and stir until incorporated.
Step 6
Steam frozen cauliflower for 7 minutes or until fully cooked. Take half of the cauliflower and purée in food processor with the cream cheese. Add the purée to the slow cooker.
Step 7
Take the other half of the cauliflower and dice into small pieces of “potato” and add to the slow cooker.
Step 8
Cook on low for another 20-30 minutes then add salt and pepper to taste and finally the fresh parsley.
