Instructions

Step 1
Boil or steam new potatoes until tender
Step 2
Toast mustard and coriander seeds in a dry pan
Step 3
In a shallow pan fry tofu until crisp
Step 4
Heat oil and fry onion until soft
Step 5
Add garlic and ginger. Cook for 1-2 minutes
Step 6
Add spices and seeds. Cook for 30 seconds until aromas are released
Step 7
Stir in spinach and potatoes until well coated
Step 8
Top with crisp smoked tofu and sprinkle with coriander to serve
