Instructions
Step 1
cut onions in about 1" dice. Start to sweat them in 2 tablespoons of oil for about 5 minutes.
Step 2
add the paprika and cayenne. cook for about 2-3 more minutes.
Step 3
for the roux add 2 tablespoons of flour and cook for a few more minutes.
Step 4
add the stock or water, the sausage or meat, and potatoes. Bring all of it to a boil for 5 min or so, reduce heat to a simmer and let cook till it thickens and the veggies and meat are cooked and tender about an hour or longer.
Step 5
season with salt to your liking.
