Instructions

Step 1
Chop up onions, garlic, ginger, potatoes, and carrots. If using fresh thyme pull leaves off. Add oil to pan, and add curry powder, pre-fry. Add onions and garlic and ginger, saute until onions are opaque. Add potatoes, carrots, and chickpea. Add the full can of one of the chickpeas. Add all of the spices let cook on medium for 15 mins or until potatoes and carrots are tender. Serve with lime brown rice or roti. You can also add coleslaw too
